Colin Thomas is an Emeritus Professor, having retired in December 2013. He has published over 100 research papers in scientific journals as well as reviews and books chapters in the fields of fermentation, the effects of shear on biological materials and biomechanics.

Professor Tong Sun, Achademic Visitor (2016)
Professor Tong Sun‘s project focused on the biofilm formation of food dominant spoilage bacteria and controlled release of natural preservative agents. Prof. Tong Sun had an academic visitor at the University of Birmingham in 2016 and returned to being a Professor at the College of Food Science and Engineering Project, Bohai University, China.
Dr Duangkanok Tanangteerapong, PhD (2011 – 2015)
Dr Tanangteerapong ’s PhD project focused on understanding the physiology of probiotic yeast cells under different formulation, processing and environmental conditions.When Dr Tanangteerapong left Birmingham in 2015, she returned to being a Lecturer at the Department of Chemical Engineering, Faculty of Engineering, Khon Kaen University, Thailand.
