Sally O’Neill is a lecturer in food safety and part of the Food Safety Group at the University of Birmingham, with over 30 years of experience in food safety practice and education. An experienced Environmental Health Practitioner for 22 years and Fellow of the Higher Education Academy, she has worked across local government and academia. She is also an assessor for the Beacon scheme and is committed to excellence in the student learning experience.

 Sally's current research focuses on effectiveness of cleaning within SME, hygiene interventions, and food policy, food waste, and water treatment . She teaches on postgraduate education and professional development in food safety at the University and collaborates with the food industry and regulatory partners to advance standards in the sector.

Biography

  • Sally O’Neill is an accomplished Environmental Health Practitioner with 22 years of experience in at Birmingham City Council and joined the University in 2017.
  • She earned her MSc (Hons) in Environmental Health with distinction from the University of Birmingham in 2014, after taking the PGDip in Food Safety, Hygiene & Management the University of Birmingham the very first year it ran in 1998
  • She gained Beacon Recognition for her teaching in 2021 and is now an assessor for Beacon, underscoring her dedication to educational excellence and commitment to the student learning experience.
  • Sally began her career as an enforcement officer at Birmingham City Council (BCC) and over the years progressed gaining the PG PGDip in Food Safety, Hygiene & Management, the CIEH certificate in Premises Inspection and Food Control ,before undertaking the MSc in Environmental Health. This means she can boast she has undertaken herself every course that the Food Safety Team teach at the University , giving a unique perspective.
    She gained extensive experience in enforcement, health promotion, and public education, being joint creator and coordinator of the Healthy Tums in Brum competition, to encourage healthier eating in Birmingham teens.  The competition ran for 3 years. Whilst at Birmingham she coauthored Guidance for Tattooist and Body Piercers and Infection Control and Internal guidance on the management of infection control with BCC swimming pools
  • She later joined Birmingham University as a guest lecturer before joining a permanent member of staff in 2017 where she leads modules on Principles of Nutrition and Water & Health on the MSc in Food Safety Hygiene Management. In addition to teaching on other modules on the MSc , she is also  module Lead for the Food safety & control Module on the MSc in Environmental  Health. Furthermore she teaches on and  runs modules on the CIEH accredited Cert HE Food Safety & Food Legislation and CIEH CPD courses
  • Her research interests included effectiveness of cleaning interventions, private water supplies , nutrition and healthy eating initiatives, food labelling and food waste
  • Sally is a Fellow of the Higher Education Academy (FHEA) and a Member of the Chartered Institute of Environmental Health (MCIEH). She actively contributes to the academic community through mentorship, participation in committees such as Athena SWAN and Equality, Diversity, and Inclusion, and collaboration with professional bodies such as the FSA and the food industry. A member of the Parents and Carers committee she is also involved in family friendly initiatives and events to support staff with caring responsibilities.   

Teaching

  • Delivers lectures on a variety of food safety topics to undergraduates and postgraduates in the Food Safety, Hygiene and Management Masters/MSc/PG Diploma/PG Certificate and CertHE Food Safety & Food Legislation
  • Lectures on a variety of food safety topics to postgraduates MSc Environmental Health and MSc in Public and Environmental Health Sciences
  • Oversees specific modules within the above courses
  • Organises and delivers CPD training for the CIEH courses
  • Supervises MSc Dissertation projects
