My research aims to investigate easy-industrially processes for the production of microparticles made of hydrocolloid materials in which active compounds has been encapsulated. These materials have a high potential to be used in the food and pharmaceutical industries as rheology modifiers having the added value of protect and control the release overtime of the encapsulated active compounds.
